Hamburger Casserole












Heat oven to 350°

2 lbs. ground beef
1 medium onion chopped
1 can tomato soup
1 can French style green beans
2 teaspoons A-1 or HP steak sauce
salt and pepper to taste
mashed potatoes

Saute the onion in oil or butter until soft. Brown the ground beef and drain off the fat. Add tomato soup, green beans, steak sauce, and salt and pepper. Pour everything into a 1 1/2 quart casserole. Spread the mashed potatoes on top. Bake at 350° for 30 minutes.

Oven Fried Chicken

Heat oven to 450°

Ingredients

Pam cooking spray
1 cup Bisquick baking mix
1 1/2 tsp. paprika
1 1/4 tsp. salt
1/4 tsp. pepper
1 cut up frying chicken or assorted pieces to equal 1 chicken

Spray the Pam in a 13x9x2" pan.
Mix the Bisquick, paprika, salt, and pepper together. Coat the chicken pieces. Place the chicken skin side down in the pan.
Bake for 35 minutes. Turn the chicken and bake about 15 minutes more or until the chicken is done.
Serve.

I got this recipe from a Bisquick box many years ago(when dirt was young as my sons say). I have changed it slightly over the years to suit my style of cooking. I've also used this recipe with boneless chicken breasts and with  pork chops instead of chicken pieces. You might have to adjust the cooking time with the different meats but the mixture works well with all of them. If you would like to see the original recipe, check out the Betty Crocker site online. Freckle's Favorite Coffeecake

Heat oven to 375°

Cake Ingredients:

1/2 cup sugar
1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
1 beaten egg
1/2 cup milk
2 tablespoons melted butter/marg.


Topping:

1/3 cup brown sugar (more if you want or if you leave out nuts)
1 teaspoon cinnamon
1 tablespoon flour
1 tablespoon melted butter/marg.
1/2 cup chopped walnuts

Mix the first four cake ingredients together in a bowl. In separate bowl mix the egg, milk and butter. Add to the dry mixture and mix well. Pour into a greased 8X8X2 pan. Mix the topping ingredients together and spread on top of the cake mixture. Bake in the oven for 20 to 25 minutes. While the coffeecake is baking, you will have time to make coffee. Then....enjoy!
